Strawberry Clafoutis Makes 6 servings Unsalted butter for mold + 2 tbsp melted 3 large eggs 1⁄3 cup blond cane sugar 2 tsp pure vanilla extract 1⁄3 cup quinoa flour (or millet or all-purpose) 2 tbsp almond meal 3 tbsp crème fraîche 3⁄4 cup milk Preheat the oven to 350° F and butter a 10.5 x 7.5 -inch baking dish; set aside. In a bowl, beat the eggs with the sugar. Stir in the vanilla. Beat in the quinoa flour and almond meal. Stir in the crème fraîche and milk, then add the melted butter. Pour the batter into the mold. Add the straw- berries. Bake the clafoutis for 35 min- utes, or until the flan is set. Remove from the oven and let cool. Best served at room temperature or lukewarm. 26 mindful June 2013 one taste
